This is one of the easiest salads to make and it’s delicious. It makes just enough salad for one person but you can double, triple etc. to get the amount you want. When you eat this salad you are getting the benefits of vitamins such as, Vitamin A, C, and B-6. As well as a few good minerals that does the body good like calcium, iron and potassium. Not to mention fiber! I personally love the taste of the wood sorrel and like to add more into my salad. The great thing about this salad is there’s many combinations that can be made.
Note: if you spray your yard with chemicals please do not forage from it.

Ingredients
1 cup kale, stemmed
1/2 cup wood sorrel, washed and stemmed
1 Tbs. raisins
3 halves sundried tomatoes
1 Tbs. goat cheese, crumbled
1 Tbs. olive oil
Salt and pepper to taste
Directions
In a small bowl tear kale up into bite size pieces. Next, add the wood sorrel leaves, flowers and seedpods. Then add the raisins, goat cheese, sundried tomatoes and olive oil, salt and pepper to taste.
