Being a beef farmer means we eat beef a few times a week. Many people do not know that before becoming a beef cattle farmer I never ate beef. In fact if it wasn’t chicken or turkey I wouldn’t touch it.
I never liked the texture or having to chew something for such a long period of time. So I never ate it. Then one day, Kevin and I had a conversation about ground turkey. He told me that every time we eat ground turkey we are eating multiple turkeys combined and packaged. But by eating our beef, that we raised, we know what they eat and when we have one butchered it’s only one cow at a time. Plus, he made a valid point, I couldn’t call myself a beef farmer and not eat beef.
With that said, I have taken a big step in my life! One of my favorite meals was always turkey meatloaf with sautéed kale or Brussel sprouts. Now its beef meatloaf and it is full of flavor. I hope you enjoy it as much as I do.
Ingredients
2 lbs. ground beef
1 Tbs. ghee
1 large onion, diced
½ cup bell pepper, diced
4 garlic cloves, minced
3 Tbs. Worcestershire sauce
½ cup tomato sauce
½ Tbs. dried basil, paprika and oregano
1 cup bread crumbs
2 eggs
Salt and pepper to taste
I love meatloaf although I haven’t made it in a while. I like to add black olives and mushrooms too. Now I’ve got to make one!

Meatloaf is something we enjoy. I have never had it with black olives in it.
